I was already working on that for another test build.
I also used this same debian 11 recipe with 2 modifications to dependencies in control on ubuntu20.04, same mongodb problem.
But, I think I will have a working recipe for 3.19.90 soon for both debian11 and ubuntu20.

I will report back to you on the state.
To make it build on debian11 you should:
- add --disable-mongodb to rules of debian 11 recipe
- remove all mongodb related from control file in debian 11 recipe
That should be enough, the .install files will not be looked at if component is not in control file
But I do believe you create them on the fly and according to what is needed.

I do like the concept of gambas3-package-config tool.
