Hello Benoît,
I posted a question in GStreamer Mailing List about no-Playing Midi file with GStramer version 1.0.6.
I had 2 answers, here:

There's a "wildmidi" plugin in -plugins-bad that may help? There's also
"timidity", but it hasn't been ported to GStreamer 1.0 yet (and I can't
figure out how to install the dependencies, but it may be easy to port).

It should work in git master or the 1.1.1 development release. There's a
new fluidsynth plugin. If you make a sample file available we can test it.

I think "Midi support" in the FAQ means something else (more like
sending midi data through the pipeline etc.)
