I reported another (similar) bug that I think may or may not be the same issue as this. 
In my case a WorkSpace control could not be selected at all with gtk.

Benoit has kindly fixed something in GTK3 now that might also fix this issue for you.

As for there being a GTK/QT switch... 
There is no switch in the IDE once it's loaded and running.  Gambas cannot "unload" a component so once the IDE has loaded using either QT or GTK it cannot be changed while running.
The IDE uses gb.gui and ANY program that uses gb.gui can be made to load a specific toolkit at runtime using the env variable GB_GUI="<toolkit>".
The GB_GUI variable can either be set globally in the system (that will make ALL gb.gui programs favour your choice) or on the command line at runtime.

If you right click the Gambas3 icon in some desktop panels/menus it "should" give you options to "Run with GTK3", "Run with QT5", etc but not all places will show these actions. eg. on my MATE system I only see the toolkit options when i right click the icon in a desktop panel. it does not show the options if i click a desktop icon or a menu. Other desktops work differently.

Or to lock the IDE to a specific toolkit you can right click a Gambas3 icon and select "Properties" In the command field change 'gambas3' to 'env GB_GUI=gb.qt5 gambas3'

But please test if the gtk problem still exists on your system after Benoits latest fix and report back here if it's the same or better.
