I think you will find x11 is still very much supported in Debian it is just not the default desktop anymore.
you can still install MATE or Gnome-xorg on debian testing branch https://packages.debian.org/testing/gnome/gnome-session-xsession

I'd recommend using xorg and not using wayland due to wayland limitations.

Debian repositories are always behind with the gambas version. 
Debian package gambas themselves. if you do not upgrade to latest gambas you are restricted to the version they have packaged in their repositories until the Debian developers update it.
